Beef and Shoepeg Corn Casserole
1 to 2 lbs. ground beef
1 can ranch style pinto beans
1 pkg. taco seasoning
1 can Rotel tomatoes
1 can white shoepeg corn
1 pkg. dry ranch dressing mix
Brown ground beef.
Add tomatoes, corn, pinto beans, taco seasoning and ranch dressing mix.
Heat until boiling.
Lower heat and simmer for 15 minutes.
Serve with corn break or tortilla chips.
